Sacramento Republic FC recognized their latest round of Glory Glory Sacramento Fund grant recipients on Saturday during Farm-to-Fork Night presented by Raley’s and UC Davis Children’s Hospital. The most recent grant recipients are Food Literacy Center, Center for Land-Based Learning and Yolo Farm to Fork. A total of $50,000 will be donated to the three organizations to aid in improving the health and wellness of our region’s youth and neighborhoods.
Food Literacy Center
Food Literacy Center works to teach low-income elementary children cooking and nutrition to improve our health, community and environment through classes featuring a “Produce of the Day” for students. Students taste and learn how to prepare a new fruit or vegetable during each of these classes, allowing them to explore different foods than what they may normally eat.
The money from the Glory Glory Sacramento Fund grant will be used to provide free food literacy education to eight Title I schools in Sacramento, serving 800 pre-K-6th grade underserved children. The program aims to tackle childhood obesity before it becomes an issue in a child’s life, teaching kids about nutrition and healthy at-home cooking to improve healthy eating habits.
Republic FC defender Derek Foran, who is paired with the nonprofit, was a part of Food Literacy Center’s Veggie of the Year Competition at Leataata Floyd Elementary. There, students and Foran sampled vegetable dishes crafted by five high-profile Sacramento chefs. Local celebrity chefs Kurt Spataro (Paragary Restaurant Group), Oliver Ridgeway (Grange) Suleka Lindley (Thai Basil), Jay Veregge (The Firehouse) and Keith Breedlove of (The Culinerdy Cruzer) made imaginative creations on beets, cauliflower, avocado, nopales and collards. Dishes included cactus ice cream and avocado chocolate pudding.

At the conclusion of the class, students, along with Foran, casted their votes for their favorite vegetable.
“It’s easy to get into bad habits when eating,” said Foran. “There’s so many sugary snacks and it’s so easy to buy for cheap. Having kids wanting to learn about fruits and vegetables and what you can make from them, it’s amazing. It’s not something many of us had a that age so it’s excellent for the kids.”
